Sourdough starter

Should it bother me that the sourdough starter that the books say takes about 3 days to be ready took off in less than 24 hours on our counter? 1/2 a cup of flour and 1/2 a cup of water in a jar, and it's foaming like crazy this morning.

Good reminder to put those leftovers in the fridge.
