FFWD: Scallop salad

First alittleleaven blog entry since the Leaven family expanded! Lots of pics of Baby Ethan at alittleleavenexpands.blogspot.com! We're at the 6 week mark and I'm actually starting to feel rested enough to cook between baby bottles...

I want scallops!!

This weekend we stopped by The Woodlands Seafood Market, which always means seafood overload for the Leaven household. Not that there's anything wrong with that - we've never met a fish we didn't like.

Our favorite dish from the weekend was, not surprisingly, from Around My French Table, and was the French Fridays with Dorie recipe from only 3 weeks ago, 'warm scallop salad with corn, nectarines, and basil'.  Mr Leaven has not stopped raving about the meal in the past 24 hours. The flavor combination is unusual but works so amazingly well.

When we looked at the recipe, the number of components was somewhat intimidating, but each component was extremely easy to prepare and assembly was a breeze.

The flavors were so light and just proclaimed summer for us. I mean, fresh corn, basil from our garden, nectarines, tomatoes, and scallops, all tossed in a lime vinaigrette.
