Tuesdays with Dorie: Popovers


I tried making popovers about a year ago and had to throw away the result - they didn't rise and were basically inedible. So when I looked at this recipe and some of the comments on the Tuesdays with Dorie blog, I was surprised at how easy they looked. You simply combine some basic ingredients in a blender and process, then pour them in to muffin tins and bake for about 45 minutes total. 


And it worked. Because these things rise so much, it's recommended that you fill alternate cups in a muffin tin to keep them from blooming into one gigantic popover. Even with the muffin tin gaps my popovers got dangerously close to one another. While it seems like a lot of people had problems with their popovers sticking to the muffin tins even after greasing, mine slid right out of the nonstick tins. Many were rather dark on the bottom (fortunately Mr Leaven likes 'em burnt) and almost all were entirely empty at their centers (fortunately Mr Leaven likes 'em soulless). I think they were supposed to have a doughy interior - not sure what I did wrong but I won't bake them quite as long next time.


We ate some plain and some with butter and honey, and they were all lovely. With a recipe so very simple, I will definitely be making these again.   1. i LOVE popovers, because they are so delicious for very little effort! mine have quite a bit of air in them with some doughy scaffolding, and yes, they have a tendency to burn pretty easily. i've found this recipe to be very consistent: http://www.kingarthurflour.com/recipes/popovers-recipe
