FFWD: Roasted Rhubarb

To my knowledge, I'd never eaten a rhubarb before Thursday night.

They're good.


I guess they're not too common down here in Texas. Mr Leaven grew up with rhubarb pie and gave me much instruction on preparing rhubarb until he was kicked out of the kitchen.

This week's FFWD recipe was just a simple preparation of fresh ingredients, which makes for good eats. Chop the rhubarb, toss with sugar and citrus zest (instead of the recommended orange, I used lemon and lime because that's what I had), and roast for about 20-30 minutes.


Topped with homemade vanilla bean ice cream, it was absolutely delicious.

  1. Glad you liked it! Some people can't get past the appearance or tartness, but I love rhubarb and could eat it every day. I made tarts this week.

  2. We had fun with this one except mine did not turn out nearly was well as my Mom's (aka "Nana") and we definitely need to revisit it. Her's was sweet when my rhubarb stash was much more green and extremly lemon-y after cooking. After reading all the amazing posts I am all the more interested in a "re-do" but we are going nuts trying to get our hands on more rhubarb. Nana hit 5 stores in one day but hopefully we will end up with some before the season is over......

  3. Looks great. This was a great recipe. Glad you liked rhubarb on first try. I had to laugh when you said you kicked Mr Leaven out of the kitchen. I guess he wasn't being helpful with his commentary.
